This is a great summer recipe that adds a bright pop of flavor. We love it over taco or fajita salads. It can also be used over many grilled meats and fish.

Ingredients

  • 1 cup cilantro leaves, packed
  • 1 lime, juiced
  • 2 tablespoons apple cider vinegar
  • ¾ cup oil (olive oil or MCT oil)
  • 1 clove garlic
  • 1 doonk stevia (1/32 teaspoon)
  • 1 teaspoon brown mustard
  • 1 teaspoon mineral salt
  • 1 teaspoon ancho chili powder
  • 1 teaspoon cumin

Instructions

Place all of the ingredients into a blender and blend until smooth. Taste for seasoning.

You wouldn’t think there really could be another, different balsamic vinaigrette recipe, but trust me, this one is it. It’s so delicious that sometimes my mom’s friends will ask her to make them a batch that can take home and use all week. We often make a double batch and store it in the fridge for up to two weeks! My mom usually makes a big garden salad full of fresh veggies like tomatoes, cucumbers, and bell peppers to top with this dressing. We sometimes just use it with greens directly out of the box. Either way, it’s delicious and will help you get in those greens!

Ingredients

  • 3/4 c. good extra virgin olive oil
  • 1/4-1/3 c. good balsamic vinegar
  • 1-2 cloves crushed garlic
  • 1-2 tablespoons fresh basil, chopped or 1-2 teaspoon dried
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste

Instructions

Place all the ingredients into a jar or shaker cup. Mix really well. The goal is to emulsify the vinegar into the olive oil so you get a thick, creamy consistency. Taste for seasoning. Pour over salads, grilled meat and veggies, or just drink. Yes, it’s that good.
